Destination Restaurants: Meals to Travel For -- Departures Magazine

One of the few Michelin-starred restaurants in the world that’s also certified organic, Copenhagen’s Relae has been raising the bar for sustainably run restaurants ever since chef Christian Puglisi and front-of-house manager Kim Rossen opened it in 2010. Puglisi, an alum of Rene Redzepi’s Noma, has been clearly influenced by his groundbreaking predecessor: The space eschews fussy details, and the food displays a fanatical devotion to showcasing Scandinavian ingredients and techniques. Many of the restaurant’s supplies come from its own organic farm, with the rest sourced from other organic, local, and small-scale farms in the region. That pride in the local community extends well beyond the food, with beer sourced from a local organic brewer and plates made by an area ceramicist. Expect dishes like Danish new potatoes in stinging nettle purée, pork with Jerusalem artichoke...
