Hugo's in TST appoints a new head chef

The luxury teppanyaki restaurant at The One in Tsim Sha Tsui has appointed new chef Katsuya Hasegawa, who previously worked at Ginza Kaika in Japan. Chef Hasegawa has over 20 years of experience in making teppanyaki and has formerly specialised in French cuisine, hence the delicate presentation and characteristics of French cuisine in his teppanyaki dishes. Chef Hasegawa believes "simplicity always outshines complexity" and he is especially fond of seafood dishes. The philosophy is displayed in dishes such as prawn uni salad in persimmon and teppan lobster with miso sauce. Guests who want to try all his specialities can opt for the omakase menu, which showcases all the chef's signature dishes made with seasonal ingredients.
