Archivists traced the codes on the bottles, identifying a collection of vintages, including 54 from 1830 – the first champagne produced after Bollinger’s inception in 1829. Of those 54, just 13 bottles were salvaged by restoration; 200 bottles remain unidentified. The general assumption is that the haul was stashed so it would be hidden from Nazi plunderers, and rather than bricking up the cellar, someone stacked the empty bottles deep across the doorway. Since the discovery, Bollinger has created two libraries in its cellars that are open to select guests: Galerie 1829, to showcase 65 vintages, and La Réserve, which displays a selection of noted reserve magnums – the ‘spice rack’ of Bollinger – mixed to ensure the consistent distinctive flavour in non-vintage years.
